The Alois Lageder Winery applies the principles of the biological-dynamic method, the holistic approach is a cornerstone of all its activities and also a principle on the basis of which to spread natural and sustainable agriculture. Their intent is to create a natural cycle in which man, animals and plants are essential and dependent on each other to obtain excellent wines.
In the Ladin language mimuèt means "according to my tastes" and precisely on the basis of their principles they cultivate Pinot Noir in South Tyrol in which they believe the best conditions are found for this fantastic vine.
Pinot Noir Mimuèt is obtained through a manolactic fermentation in steel and in wooden barrels. The result is a wine with a characteristic garnet red color, fruity bouquet with hints of wood and a fresh taste with persistent tannins.
It goes very well with white meats, game and delicate cheeses.
