Domaine Assailly Leclaire & Fils covers an area of about 10 hectares cultivated exclusively in Chardonnay. the limestone characteristics of the area and its southern exposure allow the production of wines of the highest level.
This Champagne Bru Cuvée Reservée is obtained from 100% Chardonnay to which a reserve percentage of three previous harvests is added. Alcoholic fermentation is carried out in steel. Vinification is carried out using malolactic fermentation. Minimum 36 months of stay on the lees and at least 6 months of rest after the dégorgement.
A Champagne characterized by a yellow color with golden reflections, the nose releases hints of yeast and bread crust, while the freshness of the flavor is combined with a very persistent good structure. Appetizers and fish dishes are excellent combinations.
