Testamatta of Bibi Graetz is a winery located in the town of Fiesole. With the first vintage in 2000, the company firmly believes in the use of vines and vineyards very old. The red wines are produced with Sangiovese, Canaiolo and Colorino, from small parcels arranged patchy in the territory of Fiesole and surrounding municipalities. For the production of white wines are used Ansonica, this old vine along the Tyrrhenian coast and many islands of the same Tyrrhenian Sea. Following an agreement reached with the growers island of Giglio, we directly follow the vineyards during the year and once in late August-early September, we harvest grapes which are then fermented in our winery.
