The Cantina Bibo Runge is a very young reality born in 2013 in the village of Hellgarten, near the Rhine from which it receives all the influences to enjoy an optimal microclimate for the cultivation of vines.
If we wanted to define this cellar with a single title, we could use that of "patience", that is, the patience to wait for the right time for the production of good wine.
The right time to harvest the grapes by hand, to macerate them gently, to ferment them with natural yeasts and to mature them as naturally as possible in oak barrels.

This slow and natural path is the basis of the production of this Riesling Trocken 2015, made from only hand-picked riesling grapes.

A wine to be savored slowly like the philosophy with which it is produced.

Hellgarten, a small German village in the Rheingau area, is where the wines of the Bibo Runge winery are born. The company was founded in 2013 by Walter Bibo and Markus Bonsels, both of whom had a great passion for wine, with important experiences gained in other wineries in the area. The Rheingau is characterized by the Rhine river which, in addition to designing the beautiful scenery, contributes to the uniqueness of the particular microclimate, thus influencing the ripening of the grapes. The philosophy of Bibo Runge is centered on a fundamental principle: patience. To achieve the highest possible quality, long macerations are carried out on the skins, followed by prolonged fermentation and aging in wood. Riesling, the only variety cultivated by the company, is thus enhanced in different versions starting from the "trocken", the one with the least residual sugar, to the persuasive Rheingau Riesling Spätlese QbA "Winkeler Hasensprung", from grapes harvested late. Bibo Runge also produces a classic method sparkling wine from Riesling grapes, with a maturation on yeasts of 18 months. The wines mature within ancient cellars located in the heart of Hellgarten, a town that boasts over 900 of wine history. Bibo Runge is synonymous with wines with a strong character, capable of reflecting in the glass all the complexity of the grapes and the greatness of a territory unique in the world.
