The Chianti Classico of the Castello di Volpaia company is surprising for its elegance and ease of drinking. It is a direct wine, which exudes attention, respect and territory. It was born in the Chianti Classico area where this company cultivates its vineyards with the care of biological systems. Care and respect that also concern the processes in the cellar. After the manual harvest, the grapes stop macerating for about 10 days. Fermentation is entrusted to spontaneous yeasts at a controlled temperature. Before being bottled, the wine is enriched for about 14 months in oak barrels. Intense ruby red in the glass, it expresses itself on the classic fruity notes of ripe cherries and red fruits with slight hints of violet. In the mouth the fruit is concentrated, the structure solid and soft.

Today, as the eleventh century, the village is intimately involved in the wine-olive oil production, because the fermentation room and wine cellars, the vinsantaia and bottling, and the mill orciaia modern-yet-still housed in the basement, in the halls, churches desecrated and in buildings of the village, joined together by an amazing "vinodotto" underground. Volpaia, is thus not a mere "theater for tourists", but the center of a complex rural activities which are directly or indirectly linked to all the inhabitants of the village.
