The Cavallotto company is fortunate to be located in a very flourishing territory where the crus of Bricco Boschis and Vignolo are the masters. The 25 hectares on which the vines extend are cultivated with an organic viticulture system. All the phases of the collection are carried out by hand and respect for the terroir is ino the cardinal principles of the production of this cellar.
The Barolo Riserva Bricco de Boschis Vigna san Giuseppe obtained from 100% Nebbiolo, is vinified with natural yeasts, aged in Slavonian oak barrels for 48-60 months and aged in bottle for 12 months.
The particular vintage 2012 produced a seductive and elegant Barolo. Fruity hints of plum and cherry emerge on the nose. The flavor brings back licorice and black fruit with the presence of spicy notes, the soft tannin that is characteristic of that vintage.
Ideal pairing with red meats, shellfish and grilled white meats.
