The Cavallotto company is fortunate to be located in a very flourishing territory where the crus of Bricco Boschis and Vignolo are the masters. The 25 hectares on which the vines extend are cultivated with an organic viticulture system. All the phases of the collection are carried out by hand and respect for the terroir is ino the cardinal principles of the production of this cellar.
The 2012 Vignolo Barolo Riserva, vinified with natural yeasts, aged in Slavonian oak barrels for 4-5 years and aged in bottle for 12 months, has a good structure that the particular vintage of 2012 makes delicate and harmonious.
The nose reveals a fruity bouquet of cherry and raspberry, the taste is complex and lends itself to good aging.
Red meats, shellfish and chocolate are ideal for tasting it.
Granato intenso e luminoso.
Trama olfattiva aristocratica intessuta di suggestioni mentolate e minerali unite a piccoli frutti in confettura, rose e viole, humus, radici e spezie orientali.
Assaggio armonioso e salino, di bella struttura, con trama tannica nobile e polposa rispondenza fruttata.
Carni rosse in genere, pesce crostacei grigliati o crudi, carni bianche grigliate, formaggi a grana dura o stagionati, cioccolato, o da solo da meditazione.
