La Noue extends for 2.5 hectares cultivated according to ecological regulations in Pinot Noir, with vines that are between 8 and 56 years old. Grapes are harvested strictly by hand to ensure integrity until crushing, creating a rosé that expresses such freshness and delicacy. It is a very ductile wine in pairings at the table and can be accompanied with delicate white meats, stews and fish soups.

The cultivation of the vine is essential to obtain fine, precise wines. As attentive winegrowers, our role is to maintain the best possible balance between the soil and the plant according to the climate. Our 13.5 hectare vineyard is composed of 10.5 hectares of Sauvignon Blanc and 3 hectares of Pinot Noir, centred around 6 localities to the north of Sancerre.
The soil is ploughed and scratched. A vegetal cover, controlled between rows, allows to preserve the flora and to activate the life of the soil. The pruning, disbudding and trellising work is rigorous.
They make it possible to adjust production, aerate vegetation and grapes in order to obtain perfect maturity and perfect health. The manual harvesting followed by sorting ensures the respect and integrity of the grapes until pressing (White and Rosé) or vatting (Red). Thus, vinification and maturing take place simply but precisely.
