A family estate of organic wines in the heart of the Brulhois AOC which is spread over an area of 9.25 hectares of clayey-calcareous soil in the Pays du Brulhois. The production is entirely certified organic characterized by very robust wines with soft tannins.
The production expresses in an exceptional way the naturalness of the terroir and all the organoleptic characteristics of the vines used
Domaine Boiron 2015 is obtained with a blend of Merlot, Cabernet Sauvignon and Tannat. During the vinification of the Domaine du Boiron, a total destemming is carried out, then bi-daily punching during the pre-fermentation maceration. Long fermentation with daily pumping over.
The result is a full-bodied wine with a discreet tannin, red color with violet hues, a bouquet of violets and a not very long finish.
Very recommended with lamb and mature cheeses.

In bocca è complesso, equilibrato dai fini saporai aromatici. Finale lungo.

The cultivation of the vine has long marked the history of Astaffort. At the end of the nineteenth century, activity was still important, as evidenced by the seventy vine huts listed on the city. Unfortunately and elsewhere, phylloxera will annihilate the efforts of local winegrowers. In the first half of the twentieth century, a regular clayey-calcareous replanting cover smeared 273 hectares of the municipality with varieties of grapes little known but with tasty names like bouchalès, Abourriou, big black of Calmette, Merille, Red Jurançon, Noha. At this time, the Domaine du Boiron possessed a hundred hectares of vineyards with winemaking buildings. It is in these same infrastructures, now rehabilitated, that we breed and vinify the new Domaine du Boiron.
