This is our best known product and truly expresses our company philosophy, shown through the wine's balance between elegance and structure. Made from grapes grown in the Valpolicella Classico zone, which undergo Drying before ageing in large oak barrels for a minimum of 18 months and further maturation of 6-8 months in bottle.

Location Situated in the heart of the Valpolicella Classico zone on dry stonewalled terraces facing southwest and southeast at between 150 and 450 metres above sea level.
Soil Silt-clay, partly calcareous and partly on Eocene marls.

Vinification 12 days of cold maceration then fermented at temperatures between 12° and 23°C with manual punching down of the cap three times a day, followed by post fermentation maceration on skins to give a total of 30 days. Complete malolactic fermentation.

Production Drying for about 120 days. Destemmed, then gentle pneumatic pressing.
Aging Ageing in 50hl Slavonian oak casks for 24 months. Left to mature bottle for a further 6-8 months before release. Stabilization: natural.

The mission of the Cantina Valpolicella Negrar is still now to increase the value of itsmembers activity,producing excellent wines and promoting culture and knowledge of viticulture and oenology. Today the company advises and coordinate the activity of around200 grape growers, across a total of 500 hectares, all located on the hillsides of the Valpolicella Classico region to the north west of Verona. Growers are encouraged to cultivate their vines with maximum respect for the naturalenvironment and to safeguard biodiversity. The Cantina and its members have also been able to work together to identify sites suitable for single vineyard wines and to produce special selections and even individual “cru” wines. Experience gained over many years has allowed us to use our winemaking skills t develop a range of various Amarone, Reciotos and Valpolicellas. Historically the winery has also worked hand in hand with growers in other famous viticultural zones near Verona, which allows the Cantina to offer other high quality wines such as Soave, Bianco di Custoza and Bardolino. Total production of the Cantina is today over 8 millions bottles per year, obtained by more than 60.000 quintals (13 million lb.) grapes. The winery has a total capacity for oak ageing of around 12.000 hl.
