    This Port should be served slightly chilled and is also a good compliment to rich pates and fois gras. Good to drink cold as an aperitif or with a mixer. White Port and tonic is a particular favourite on the terrace at La Rosa in the summer whilst nibbling on some home produced roasted almonds. Make it like a gin and tonic together with ice and a slice of lemon. For immediate consumption. All our ports are made in the ?house style' namely slightly drier without any cloying sweetness that can be associated with some other ports. We also work hard making sure the brandy is well integrated. As with our wines, we search for harmony and equilibrium from our vineyards and we try to enable the grapes to express themselves in the bottle. The La Rosa style is to make well defined wines without too much extraction and tannin. A first class aperitif wine, a beautiful amber/honey colour, it shows excellent fruit on the palate, but at the same time has a long relatively dry finish.

    For the realization of this method is used Sherry solera. The solera system (from the Spanish 'suelo') was the mid-1800s when the English importers asked the wineries have a constant quality in taste.     The history of this wine is linked to the lively winemaking reality of the Langhe at the end of the 19th century. The protagonists are Dr. Cappellano of Serralunga and Dr. Zabaldano of Monforte, who were able to apply, each according to their own formula, the much vaunted properties of the China Calissaia to Barolo, creating an elixir with immediate commercial fame and lasting fortunes interior of the peasant culture of the region. After obtaining a certain market interest, Barolo Chinato knows the indifference of the decades following the second post-war period, precisely in correspondence with the crisis of the peasant cultural models. Ceretto understands its importance and is among the protagonists of its relaunch at the end of the 80s. Our formula provides for the use of a Barolo D.O.C.G. to which are added the herbs, a dozen, strictly selected, and the China Calissaia, infused separately in alcohol. The tasting result is a continuous succession of flavors that closes with a pleasantly bitterish note perfectly balanced by sugar. Barolo Chinato can be considered an excellent meal and can well accompany desserts based on chocolate.
