He began his adventure in the production of Champagne after a series of work experiences that led him to collaborate with the great Bordeaux producers.

Georges Remy is a young vigneron, calm in nature and full of good intentions. He began to work part-time for the family vineyard in 2005 and at the same time developed with a small service company for other wineries. This will prove, according to Georges, to be the key to accelerating the process of experimentation, and learning in the relationship with the vineyard. Thanks to the comparison with other vigneron and to the increasingly convinced approach towards processing techniques of the increasingly sensitive and sustainable vineyards, since 2011, when Georges takes over the family business, he has definitively abandoned the use of any natural herbicide chemistry, fully embracing the dictates of organic and biodynamic agriculture. The vineyard, which covers 4.6 hectares, has been certified organic since 2015. Most of the vineyards are located in Bouzy and a small part in Tauxieres, a place that is characterized by the presence of dark clay soils rich in silica and gypsum. In addition to the traditional treatments provided by the Georges uses herbal treatments as well as some biodynamic preparations to minimize the use of sulphites in the following ways vinification. The wines are made with the minimum possible intervention. Spontaneous fermentation in barrels and aging on its lees until bottling which takes place following the lunar cycles.
