The Maison Pierre Gimonnet & Fils owes its birth to Michel Gimonnet, one of the precursors of winemaking in small stainless steel tanks, to guarantee respect for the characteristics of the terroir of origin of the grapes.
Today Michel's work is carried out by two of the four children to whom he has transmitted his know-how and his concern for an almost obsessive perfection. Heirs of his innovative spirit, Olivier and Didier work to make Pierre Gimonnet & Fils an exceptional domain for the production of Champagne.
Their productions embody all the style of Champagne, freshness and mineral intensity are characteristics that we will find in each cuvée.
Each cuvée produced stands out for its characteristics and that of Champagne 1er Cru Blanc de Blancs Gastronome Brut is certainly freshness.
Cuvée Gastronome is a young vintage concept where it can be found among few Champagne producers. It is a cuvée in which we seek an expression of the complexity and richness of the vintage but with the freshness of the "sans année jeune".
For Didier Gimonnet, it is a regal Champagne. "We bite a juicy fruit with a refreshing texture."

The history of the Gimonnet family has been linked to the Champagne region since 1750, but it is from the middle of the twentieth century that Pierre Gimonnet, together with his sons, began to create cuvées of great importance, based on the Chardonnay vine. We find ourselves, not surprisingly, in the Côte des Blancs, where from the 28 hectares of property, the company Pierre Gimonnet produces grapes with which it produces Champagne with a distinctive and absolutely recognizable style. Being able to count on vineyards that reach even 75 years of age, conducted in full and total respect for the environment, the Maison Pierre Gimonnet adds wisdom and perfection. The vinification is based on traditional methods, with grapes that are harvested manually and left to ferment in small vats. The malolactic fermentation follows, after which a single light filtration is carried out before the tirage, while the disgorgement takes place only three months before the product is shipped. Finally, topping up is light and delicate, so as not to mask the natural, elegant and fresh style of Chardonnay.
