All vineyards are conducted under organic farming: lifting of herbicides, using compost for fertilizer production and make their revegetation in alternating rows. The Gruss retain some vineyards with vines older than 40 years, giving the wines called "Vieilles Vignes". Grapes are picked by hand. The vinification traditionally takes place in old oak barrels, which were purchased by his great-grandfather Joseph. No magic in the cellar for a production that reflects the terroir and the grape varieties of Alsace, the result of a careful interpretation of the territory and faithful to tradition.

Alsace is a land of whites truly exceptional and exciting, whose reputation is well deserved and well-established for centuries. Gruss I'm here at least since 1600, as shown by the emblem of the house, with two keys that are derived from the name of the old inn located in the center of the picturesque village of Eguisheim. At the beginning of last century, however, began to trade wine Eugene Gruss and his son Joseph, after the Second World War, decided to buy vineyards to produce and bottle it themselves. The maison Joseph Gruss et Fils is then passed to his son Bernard who has expanded again and today we are already in its fourth generation with the young André curing cellar, helps his father in the vineyard and his mother Anne-Marie following the part commercial. Andre, who is a wine-very smart, it launched a major turning point management company, has decided to restructure the existing winery and equipment whilst respecting the best tradition and style of the family. Since 2001, André Gruss, who is now the responsibility of the cellar, helps his father in the work between the rows and accompanied his mother to the commercial side. All the vineyards are conducted with organic farming. The vineyards have yields ranging from a minimum of 25 quintals per hectare, for the selection of Grains Nobles, and 80 kg for grapes destined for sparkling wine.
