More than 140 years of history are the visiting card of the ancient Maison Guinot, known for being among the most important producers of Blanquette de Limoux, one of the oldest sparkling wines in France.
Mauzac is the particular grape grown in this region from which the Maison's sparkling wines are born. The processes follow artisan methods, with minimal impact and use of natural substances.
Blanquette de Limoux is obtained according to the traditional method, using indigenous yeasts and manual processes.
Just think that this Maison is the last in France to perform remuàge manually.

Guinot grows and makes wine in the vineyards and wineries in Limoux from 1875, date of foundation of the winery by E. Andrieu and Gedeon Guinot. After the gold medal at the Universal Exposition in Paris in 1889 Guinot is knowed for its high quality. Today, four generations later, its tradition and its quality can be found in his Cuvée. After aging on the lees, which lasts from two to five years,and the manual remuage, the degorgement is done to the volée and not a la glace.
