Radically innovative, Zerosolfiti is the result of near-obsessive work and attention to the quality of the grapes before vinification. Not just with "zero added sulfites," it also undergoes a minimum of synthetic treatments in the vineyard as well as a vigorous washing of the grapes before pressing to eliminate any residual sulfur.

REFINEMENT Sulle fecce in botte per 10 mesi durante i quali vengono svolti bâtonnage settimanali per evitare il compattamento delle fecce. Segue assemblaggio in acciaio senza alcuna chiarifica, stabilizzazione o filtrazione.
WINEMAKING Le uve dei vitigni che compongono questo vino vengono nebulizzate con acqua 3 giorni prima della raccolta per poter dilavare i residui di zolfo impiegato nei trattamenti estivi. diraspa-pigiatura delle singole varietà, senza aggiunta di bisolfito di potassio sulle uve, a cui segue la fermentazione alcolica - spontanea a mezzo di lieviti indigeni - a contatto con le bucce in vasche d'acciaio a temperatura controllata di 28-30 °C per la durata di 15 giorni. Svinatura a secco e travaso in botti di rovere da 500 litri.

The Langhe are based on soils of Miocenic origin of Helvetian type, composed by clayey marls rich in active limestone. Doriolo, San Luigi, Rinaldi are names reminding immediately some of the most prestigious exposures of the Langa's territory, where a generous sun matches with an almost perfect composition of the soil.
