MicroBio Wines is the personal project of Ismael Gozalo, who together with Javier Zaccagnini created Ossian. Since 1998, Ismael has been producing its wines also outside the family winery, Viñedos de Nieva.
He started to produce young, fresh and rather varietal wines, but soon he started working with a line of organic or natural wines to improve the personality of the variety and soil.
MicroBio Rack is a wine obtained from Verdejo from several vineyards in the area planted not grafted on soils with siliceous sands and boulders.
Once the grapes are harvested and pressed in the cellar, they ferment with autochthonous yeasts in stainless steel deposits, working with musts and fermentation with high turbidity so that the wine becomes self-protected.
After fermentation, it is left to rest for 3 months in the same deposits with its lees, without pumping over or batonnage, to preserve the reduction. It is bottled without added sulphites.
Excellent with white meats and low-fat fish dishes.
