Orvieto is one of the rare Italian zones suitable for the production of sweet wine, a fame that has been handed down over the centuries from the time of the Etruscans. Land exposed to morning mists are the most favorable to develop the Botrytis Cinerea which enables us to make the Muffa Nobile. When the conditions are right ? usually towards the end of October, we meticulously harvest the bunches of only the highest quality grapes infected with desired the Botrytis.

This is a wine of a warm, gold color.

At Palazzone we are surrounded by vines. Within view of the city of Orvieto resting on its rocky outcrop, the vineyards cover the slopes between Rocca Ripesena and Il Romitorio at a height above sea level of between 210 and 340 metres, with aspects ranging from east to north-easterly. At Palazzone we are always experimenting and testing new methods to explore and evaluate the potential of the terrain infact we are developing new vineyards, because we are in no doubt that it is the vineyard above all else that produces great wines. Harvesting of the grapes is carried out by hand only during the coolest hours and bunches are carefully selected to ensure that we only use those that will preserve their aromatic potential. Once picked our grapes are taken immediately to the cellar and vinified using modern soft-pressing devices. The clear musts, inoculated with selected yeasts, start fermenting and a desirable temperature level is maintained by means of a refrigerating system that is fed by our own cool spring water. Prior to bottling the wines are decanted and filtered to ensure that no spoilage has occurred and at the same time they are subjected to chemical analysis and tasting to determine quality. After being bottled several of our wines are aged in bottles for some months during which they are stored in our underground tufa grottoes so as to maintain optimum climatic conditions.
