A renowned organic producer and a profound connoisseur of the Foggia area, Paolo Petrilli has also been a winemaker for about 10 years, with the aim of aiming for the production of high quality wines that are representative of the Lucera area. A goal that was achieved in full thanks to the production of Cacc'e Mmitte, a wine with a unique and powerful character, which perfectly represents Lucera's terrior. Balance and elegance are the characteristics that Paolo Petrilli researches and it is what we find in the glass, while we taste his wines. Years of experience have led him to winemaking in wooden vats, progressively renouncing those in steel; use of wood that remains, however, always well dosed and calibrated for the refinement of its wines. Paolo's project found fertile ground in the production of Cacc'e Mmitte di Lucera, a wine renowned in the past much more for its strength than for its finesse and elegance.
