Paglierino luminoso illuminato.

Smell

Subito note tostate e lampi minerali, poi frutti freschi, mandorle e crosta di pane.

Taste

Morbido in bocca pur nel suo dosaggio estremamente secco, fresco, di bella grassezza e consistente sapidità.

Pairings

Eccellente come aperitivo con antipasti, crudità e crostacei, zuppa di pesce in bianco.

WINEMAKING Alla fermentazione a temperatura controllata in vasche d'acciaio ed in parte (circa 20%) in carati di rovere, fa seguito, in primavera, il tiraggio con l'inizio di una lenta rifermentazione in bottiglia secondo il metodo tradizionale della Franciacorta.
PERLAGE Finissimo perlage, molto consistente e continuo.

Agricultural tradition since the thirteenth century, the Ricci Curbastro family leading companies in Lugo di Romagna (RA) to Rontana of Brisighella (RA) and the 'homonymous farm Capriolo in Franciacorta (BS). Of the 32 hectares of farmland 27.5 are invested in vineyards according to the strict guidelines of modern viticulture and wine Franciacorta Consortium which the company adheres from the foundation. In the garden where stands Villa Evelina is the underground cellar in which they take the slow fermentation and maturation of Franciacorta DOCG. The vinification is followed by wine experts, Annalisa Massetti and Riccardo Ricci Curbastro; a mix of experiences for wines destined for more demanding palates of consumers around the world.
