Grillo Viogner Rina Ianca is part of the production of Cantina Santa Tresa, one of the most renowned organic farms in Sicily, born from the intuition of the Girelli brothers who, conquered by the warmth of this land, decide to transfer all their entrepreneurial know-how.

The protagonist of this reality is the red earth of Santa Tresa which transfers all the qualities of this splendid region to the vineyards, enhanced by the adoption of the organic farming system, the cornerstone of the company philosophy.

Grillo Viogner testifies how Sicily is a land of great white wines, appreciated and awarded internationally, expression of one of the most renowned autochthonous Sicilian vines.

Rina Ianca, which in Sicilian means "white sand", comes from a blend of Grillo and Viogner in which the qualities of the Sicilian grape are combined with those of the French grape which in Santa Tresa finds the ideal conditions to be cultivated.
The result is a splendid white in which minerality and freshness typical of the Sicilian grape coexist with the intensity and thickness characteristic of French grapes.

Ha un bouquet stratificato di frutta bianca come la pesca, che si sviluppa gradualmente in note di albicocca ed erbe aromatiche.

Taste

Al palato ha una splendida mineralità, è ben equilibrato con una bella morbidezza nel finale.

Pairings

Perfetto accompagnamento ad antipasti di mare, crostacei, pasta o risotti a base di pesce o verdure. Perfetto anche con i salumi.

COLLECTED Le uve Grillo e Viognier vengono raccolte a mano e messe in piccoli contenitori da 15 kg. Il Viognier viene raccolto a fine Agosto, mentre il Grillo viene raccolto nella prima metà di Settembre.

REFINEMENT Dopo la fermentazione, i due vini vengono assemblati insieme e il vino viene conservato sulle fecce fini per circa 4 mesi, con frequenti rimescolamenti.
WINEMAKING Entrambi i vitigni vengono vinificati in modo simile. Le uve vengono raffreddate per una notte in una cella frigorifera per abbassare la temperatura a 6-8 °C, proteggendo così le caratteristiche aromatiche dell'uva. Il giorno successivo, l'uva viene diraspata delicatamente e pigiata in modo molto soffice. Il mosto rimane in un serbatoio per una notte ad una temperatura di 10 °C, permettendo la naturale sedimentazione di tutte le particelle solide. Il vino viene trasferito in una vasca di acciaio inox, dove la fermentazione avviene a 17-19 °C per 10-12 giorni.
