Spumante brut il Grillo is produced only with the grapes of the autochthonous grape through organic agriculture.

WINEMAKING Dopo la diraspatura, le uve vengono trasferite in una pressa pneumatica, dove vengono pressate in modo molto soffice per preservare le delicate caratteristiche dell'uva Grilllo. Il mosto viene poi raffreddato e le particelle solide vengono lasciate decantare sul fondo del serbatoio in modo naturale. La fermentazione primaria viene effettuata ad una temperatura di 18 °C per 8-10 giorni. Il vino viene poi messo in un altro serbatoio di acciaio inox per la fermentazione secondaria. Gli speciali ceppi di lievito aggiunti lavorano molto lentamente, ad una temperatura di 14 °C, creando un perlage delicato e conservando la freschezza.
