The Sibiliana project was born from the desire to enhance the products of the Cantine Europa Group, starting from the selection of the best vines in respect of the land and nature where they are born. As part of this project not only of eco-sustainability but also of circular economy, it produces organic wines and sparkling wines from Grillo grapes.
The same waste products are used to make a compost for biological agronomic use.
Sensale Chardonnay Bio stands out for its elegance and pleasantness, characteristics enhanced by the biological regime with which Chardonnay grapes are produced. The grapes are harvested by hand and brought to the cellar, where it is gently pressed and cooled at 16 °. The must produced is fermented with selected yeasts and aged in steel tanks at controlled temperatures.

L'uva, dopo la raccolta fatta a mano, viene velocemente portata in cantina, delicatamente pressata ad un BAR di pressione massima, e immediatamente refrigerata a 16 °C. Il mosto di alta qualità ottenuto viene preparato alla fermentazione con i lieviti selezionati ad una temperatura di 16-18 °C per 15-18 giorni.

Cantine Europa is an agricultural cooperative society founded in 1962 in Petrosino, in the province of Trapani, and is the world's first producer of Grillo. Today the winery has 2,100 members and over 6,000 hectares of cultivated land between the provinces of Trapani, Agrigento and Palermo. Here, the rolling hills of Western Sicily, kissed by the sun and caressed by a mild, well-ventilated climate, overlook the azure blue sea, recreating a unique environment, naturally suited to advanced and selective wine growing.
