The Domaine Thévenet-Delouvin is located in the heart of the Marne valley in Passy-Grigny, a village in Champagne near Dormans.
The three Champagne vines are grown here: Pinot Meunier, Pinot Noir and Chardonnay through the application of the principles of sustainable viticulture.
The eco-sustainable approach receives an important recognition in 2016 when two important certifications are awarded at the Domaine: H.V.E. (high environmental value) and V.D.C. (sustainable viticulture of Champagne)
Within the company, all phases are followed with precision, in order to create authentic cuvées that highlight the characteristics of the terroir and guarantee wines with a strong personality.
The Infini cuvée of Thévenet-Delouvin is made according to the principle of perpetual reserve, which for the most part is made up of Chardonnay created during the 2010 vintage.
Every year, a part of the wine is extracted and bottled, replaced at each harvest by the same blend, based on 50% of Chardonnay and 50% of Pinot Noir.
A rich and very balanced Champagne that aging in stainless steel tanks preserves all its freshness.
Ideal with fish dishes, not very mature cheeses and white meats
