The Bocca di Lupo estate stands on an area famous for its wild nature and its dedication to hunting. The vineyards are born in an area where hard work has always been necessary to ensure high quality production due to the harsh winters and strong temperature changes.

Bocca di Lupo is the maximum expression of Aglianico and the spark that made the Tormaresca project come on. 15 years have passed since that beginning and this time has allowed the creation of an exceptional wine for maturity and personality.

The grapes from which this wine is produced, deriving from certified organic agriculture, are harvested slightly ripe, after a soft pressing the must is fermented in steel and the maceration managed with soft pumping over. Manolactic fermentation takes place in oak barrels followed by an aging of 24 months in bottle.

Bocca di Lupo is an Aglianico in purity, the spearhead of the company.

Intenso ed elegante. Le note di frutta rossa matura ben si sentori speziati di vaniglia e cioccolato, balsamiche.

REFINEMENT Terminata la fermentazione il vino è trasferito in barrique di rovere, dove ha avuto luogo la fermentazione malolattica ed il necessario affinamento. A seguito dell'imbottigliamento Bocca di Lupo ha riposato almeno 1 anno in bottiglia.
WINEMAKING All'arrivo in cantina le uve sono state diraspate e adagiate su un tavolo di cernita per un ulteriore selezione in modo che solo gli acini perfetti raggiungessero i tini di vinificazione. La fermentazione alcolica ha avuto luogo in serbatoi di acciaio inox ad una temperatura controllata di 26-28 °C. La macerazione si protrae per 15-18 giorni ed è stata gestita con follatura intervallate da délestage e brevi rimontaggi al fine di effettuare un'estrazione graduale e delicata. Durante questa fase si è scelto di rimuovere una buona parte dei semi per evitare che gli stessi apportassero sensazioni astringenti.

Viticulture in Puglia is history and at the same time innovation. Cultivation of wines started thousands of years ago, at the time of "Magna Grecia", to which the Greek origins of many names of Apulian grape varieties attests. Tradition continues through the presence of native varieties such as Negroamaro, Aglianico and Primitivo, both true expressions of a strong and extra-ordinary vital territory. The production of high quality wines is related to recent steps towards innovation and creativity: substantial changes (i.e. Chardonnay and Cabernet) that express themselves in the "terroir" in a completely unique way. Tormaresca is the expression of the above two souls. Character, personality and top quality are the characterustucs that Puglia trasmits to the native grape varieties. For this reason the Antinori family gave birth to Tormaresca in 1998 when they started investing in Puglia, considering it one of the most promising regions in Italy for the production of high quality wines with a strong territorial identity.
