The extreme practice of biodynamics has led Vincent Couche to experiment with a label that is born without any addition of sulphites, the "Chloé". It is a Champagne Dosage Zéro born from a cut between pinot noir and chardonnay, which moves on an extraordinary progression of aromas, and which in the mouth lashes the palate with freshness. In the cellar fermentations take place spontaneously, both in wood and in steel; the refermentation takes place in the bottle, as per the rule for the production of the champenoise method. The wine then remains on the yeasts and, at the time of disgorging, no dosage liquor or any sulfite is added. A label dedicated to all lovers of natural French bubbles, to enjoy a moment of pure ecstasy.

Stupendo con le tartare di crostacei, è da provare anche con i secondi di pesce. Perfetto con una zuppa di rombo allo zafferano.

Vincent Couche is a young Vigneron of the Cote des Bar, 10 hectares of vineyard planted at Pinot Noir in 1973 in Buxeuil and 3 hectares of vineyard planted at Chardonnay in 1985 in Montgueux. Since 2008 she has been running the Domaine family with biodynamic practices (Demeter certificate) for the maximum respect of any form of life present in the soil, above and below it. The density of plants up to 10,000 stems per hectare increases the competition between the vines, which, by reducing the production, ensure the bunches full maturity. Great passion and determination for an annual output of about 60,000 bottles.
