Vincent Couche is a profound supporter of the principles of biodynamic agriculture which he uses for the production of his wines. We are in the Cote de Bar area, always a kingdom of Pinot Noir characterized by the presence of small producers but of high quality.
This Champagne Dosage Zero is made from 65% Pinot Noir and 35% Chardonnay, produced without the addition of sugars. The two cuveè are assembled and fermented in the bottle according to the Champenoise method and rest on their lees for 8 years.
The result is a straw yellow Champagne with a very fine perlage and a citrusy perfume. The taste is elegant with a characteristic freshness and minerality that make it ideal to accompany fish dishes and appetizers.

Vincent Couche is a young Vigneron of the Cote des Bar, 10 hectares of vineyard planted at Pinot Noir in 1973 in Buxeuil and 3 hectares of vineyard planted at Chardonnay in 1985 in Montgueux. Since 2008 she has been running the Domaine family with biodynamic practices (Demeter certificate) for the maximum respect of any form of life present in the soil, above and below it. The density of plants up to 10,000 stems per hectare increases the competition between the vines, which, by reducing the production, ensure the bunches full maturity. Great passion and determination for an annual output of about 60,000 bottles.
