Details of wine
The "Eclipsia" is a Brut cuvée that is born from the union of three different vintages, which, once assembled by Vincent Couche, mature for three years on bottled yeasts. This is a Champagne whose final cut shows a predominance of pinot noir on chardonnay, whose grapes grow according to certified biodynamic farming practices. In the cellar fermentation takes place spontaneously, and the fermentation takes place in the bottle, as is the rule for the production of the champenoise method. A French bubble in which "harmony" is the word that is the basis of the tasting, where freshness and aromatic complexity coexist giving rise to a classy product.

CELLAR
Name: Vincent Couche
Start-up year: 1973
Cultivated hectares: 13
Address: 29 Grande rue 10110 Buxeuil
Web Site: www.champagne-couche.fr
Vincent Couche is a young Vigneron of the Cote des Bar, 10 hectares of vineyard planted at Pinot Noir in 1973 in Buxeuil and 3 hectares of vineyard planted at Chardonnay in 1985 in Montgueux. Since 2008 she has been running the Domaine family with biodynamic practices (Demeter certificate) for the maximum respect of any form of life present in the soil, above and below it. The density of plants up to 10,000 stems per hectare increases the competition between the vines, which, by reducing the production, ensure the bunches full maturity. Great passion and determination for an annual output of about 60,000 bottles.
