WINEMAKING | Tradizionale, in tini di cemento a circa 30 °C. Macerazione a freddo per 5 giorni. La fermentazione è avviata da lieviti indigeni e poi proseguita con l'inoculo di lieviti selezionati coltivati (15 g/Hl). Le pratiche di estrazione sono decise al fine di ottenere vini ben strutturati. |
