The name of this winery "Zým?" means yeast, that is one of the basic elements of enology, but also that which more than any other refers to the naturalness of production.
The company logo is represented by a vine leaf in which a pentagon is inscribed which symbolizes the 5 fundamental elements in the production of wine: man-vine-earth-sun-water.
This would be enough to describe the main objective of this winery, which consists in making wines through an eco-sustainable production system and in total respect for the territory of which man becomes the natural custodian.

Harlequin is a blend of 15 different grape varieties handpicked bunch by bunch, fertilized with organic substances, selected by hand and placed in plateaux without the aid of machines.
Fermentation in cement tanks with indigenous yeasts and aging in French oak barriques.

The label, inspired by the figure of Harlequin, represents the mask, the tear that falls on the face and the tomato stains on Harlequin's dress.

An excellent wine for meditation.

Color

Rosso rubino brillante con riflessi granata nell'invecchiamento, di buona intensità. Denso alla rotazione con glicerine ben evidenti.

Smell

Mix di frutta, fiori e minerali in alternanza con sensazione di volume e dettaglio ben definiti.

Taste

Sensazione di avvolgente ricchezza e complessità, frutta, spezie e alcoli superiori si alternano con sapori di marmellata di frutta e sottobosco, poi tabacco, cannella, noce moscata, chiodi di garofano uniti alla mineralità esaltano la profondità del puzzle. Chiude con persistenza e suadente dolcezza. Si distingue dal fratello minore Kairos per la maggiore definizione del dettaglio.

Pairings

Si esprime al meglio con piatti importanti e piatti delicati di carni bianche e rosse con salse robuste e speziate. Ideale con formaggi saporiti e maturi e cacciagione. Eccellente per fine pasto e come compagno di meditazione.

GROUND Diversi a seconda della località e posizione alluvionale/vulcanico/glaciale.
REFINEMENT Segue un duplice processo di affinamento per un totale di 30 mesi utilizzando barriques nuove di rovere francese da 225 litri (200%), senza alcun travaso. Il vino viene imbottigliato senza effettuare chiarifica e subisce un ulteriore affinamento in bottiglia per almeno 2 anni. Harlequin è prodotto solo nelle annate importanti.
WINEMAKING Pigiate tutte insieme senza diraspatura, le uve fermentano in vasca di cemento con lievito indigeno per ca 30 giorni. Seguono follature, delestages e soprattutto il controllo visivo, olfattivo e uditivo da parte dell'uomo. Si procede poi alla svinatura e alla decantazione per circa 10 giorni.

The name Zým?, from Greek, means “yeast.” Yeast is, of course, an indispensible element in the world of oenology, but it also bears a symbolic meaning, since it conjures up the concept of naturalness, a fundamental value in Celestino Gaspari’s professional and existential journey, as well as the process of fermenting, understood as a continuous striving towards transformation.In harmony with that philosophy, the winery logo represents a grapevine leaf in which is centred a pentagon, symbol of the five basic elements that combine to yield wine: man-vine-earth-sun-water. Re-establishing an ideal habitat where man and nature are in perfect symbiosis is, in fact, the point of both departure and arrival of a new humanism of the earth, of which Celestino Gaspari and Zým? are promoters. This new worldview has as its objective the establishing of a new relationship with the environment, with man as the natural guardian of his local corner of earth, the one who protects it, but also the one who can renew it, reinterpret it. Ecosustainability with respect to vineyard management practices, transparency of the final product through understanding of its production processes, and respect for the rhythms of nature: these are the cardinal principles of Zým?’s approach to winemaking. The approach is an element and symbol of a simple style of living in syntony with the earth, in a historical moment in which man, bewildered by the opulence of a false well-being, has put at risk his own survival. Tradition and innovation are the two complementary tracks on which Zým?’s wine production moves forward: respect for, and attention to the historic wines of the Valpolicella area go hand in hand with innovation and experimentation with new wines that will enhance and renew the local terroir.
