The Zymè Winery is recognized by all as a milestone in eco-sustainable production, not surprisingly its name translated into Italian means "yeast", a fundamental element in wine production.
A reality in which the earth is the main actor of the scene that must not be manipulated but taken care of and valued.

The Kairos produced by Zymè is an extremely complex wine, just think that it is the result of the assembly of 15 different grapes each with its own characteristics.
At first glance, the label that highlights the link with the other Harlequin production is striking, here Arlecchino's dress is made of different pieces with different colors that represent the different grapes used for its production.

The different grapes are harvested according to their ripeness and selected by hand to preserve quality and compactness.
Vinification is carried out in steel and cement tanks, cryo-maceration and fermentation with indigenous yeasts. Aging for 2 years in barriques and for 6 months in bottle.

A wine that fascinates for harmony and complexity, impersonating all the characteristics of the terroir and the cellar from which it comes.

Color

Rosso rubino brillante con riflessi granati nell'invecchiamento, di buona intensità. Denso alla rotazione, con glicerine ben evidenti.

Smell

Mix di frutta, fiori e minerali, in alternanza.

Taste

Sensazione di avvolgente ricchezza e complessità. Frutta, spezie e alcoli superiori si alternano con sapori di marmellata di frutta e sottobosco, poi tabacco, cannella, noce moscata, chiodi di garofano uniti alla mineralità esaltano la profondità del puzzle. Chiude con persistenza e suadente dolcezza.

Pairings

Si accompagna a piatti importanti e delicati di carni bianche e rosse con salse robuste e speziate. Ottimo con formaggi saporiti e maturi e cacciagione.

The name Zým?, from Greek, means “yeast.” Yeast is, of course, an indispensible element in the world of oenology, but it also bears a symbolic meaning, since it conjures up the concept of naturalness, a fundamental value in Celestino Gaspari’s professional and existential journey, as well as the process of fermenting, understood as a continuous striving towards transformation.In harmony with that philosophy, the winery logo represents a grapevine leaf in which is centred a pentagon, symbol of the five basic elements that combine to yield wine: man-vine-earth-sun-water. Re-establishing an ideal habitat where man and nature are in perfect symbiosis is, in fact, the point of both departure and arrival of a new humanism of the earth, of which Celestino Gaspari and Zým? are promoters. This new worldview has as its objective the establishing of a new relationship with the environment, with man as the natural guardian of his local corner of earth, the one who protects it, but also the one who can renew it, reinterpret it. Ecosustainability with respect to vineyard management practices, transparency of the final product through understanding of its production processes, and respect for the rhythms of nature: these are the cardinal principles of Zým?’s approach to winemaking. The approach is an element and symbol of a simple style of living in syntony with the earth, in a historical moment in which man, bewildered by the opulence of a false well-being, has put at risk his own survival. Tradition and innovation are the two complementary tracks on which Zým?’s wine production moves forward: respect for, and attention to the historic wines of the Valpolicella area go hand in hand with innovation and experimentation with new wines that will enhance and renew the local terroir. Culture, history, tradition, innovation – a glass of wine is so many things, but in Celestino Gaspari’s heart, wine is above all yeast for the mind, and a yeast that grows a project, Zým?.
